Because Armed and Unarmed Stations are considered ships for the purposes of effects, would a ship or unique squadron that destroys a Station be eligible for Veterancy after the battle?

Yes.

Stations, like ships and squadrons, are immediately considered to be destroyed when the condition for their destruction is met IE: number of damage cards or hull dial. (Remember that being set to the "destroyed" state, and being removed are not the same thing)

Thus if the station is destroyed during an attack, the station is considered to be a ship when it is destroyed.

If that occurs the attacker is considered to have "destroyed a ship" during that attack, and would then be eligible for Veterancy.
